Glögimuffins

Gluten- free and lactose-free muffins with non- alcoholic mulled wine.

Glögimuffins
For 12- 14 muffins you need:
2 eggs
1 dl- sugar

3,5-4 dl - gluten-free flour mixture
2 tsp - baking powder
1,5 tsp - vanilla extract
1,5 tsp - cinnamon
1 tsp - cardamom

1 dl - Glögi/ non alcoholic mulled wine (concentrate)
1 dl melted butter / margarine (lactose-free)
1 dl - plum puree (baby food)
1 dl- raisins

Optional:
slivered almonds
powdered sugar

Start by setting the oven to warm up to 200 C degrees.

Beat the eggs and sugar until stiff.

Mix together all the dry ingredients in another bowl.

Then add alternately the flour mixture and liquids (mulled wine and melted butter) to the egg-sugar mixture.

Add plum puree and raisins.

Pour the batter to a muffin tin (and add some slivered almonds on top).

Bake in preheated oven at 200 C for about 15 minutes.

When the muffins have cooled down a little, sprinkle some powdered sugar on top.
